PRODUCTION METHOD
Harvest by hand in small boxes. The vineyards are vinified
separately in small French oak vats and barrels open
500 liters. With whole grape stalk (between 30-100% depending on
the vineyard). Pre-fermentation maceration in cold (2-7 days) Extractions
soft without using pumps (toe with feet) Maceration time:
between 10 and 30 days. Natural malolactic fermentation in barrels.
Aging on lees.
