The old Garnacha vines clinging to the schist, or Pizarra of the south facing mountainside of Cebreros seem to produce some of the most complex wine of the Gredos mountain range. These vines rest at around 900 meters or so, and there for enjoy very intense sun in the daytime with very cold nights.
open vat fermentation with long maceration period, both post and pre fermentation, natural yeast, malo in barrel. Unfiltered, so please decant for sediment.

14 months in 500L French oak barrels

Tasting Notes, etc.:
Very dense and concentrated wine, with intense aromas of minerality, mountain herbs, and black raspberries and violets on the nose. The palate is totally filled with layers of red and black fruit, liquorice, rosemary, thyme and lavender... very complex and full bodied with a lengthy, mountain herb and spicy finish. Great structure, fantastic acidity, lots of tannin, but soft and integrated as is inevitably high alc. of Garnacha from this area.
