Harvest by hand very early in the morning. Special maceration (about 12 hours). Temperature controlled fermentation. Aging with lees.

Tasting Notes, etc.:
Pale yellow-gold. Intensely perfurmed, complex nose displays fresh lime, grapefruit, anise, herbs, and white flowers. Nervy citrus flavours are complicated by thyme, licorice and white pepper, with bracing minerality adding verve. The finish clings tenaciously, repeating the mineral and floral notes. Weightless, precise, and impressively persistent, with an filigree quality that is really alluring.
